Demi Chef de Partie Pastry - Kouzon

Job Description:

As a Demi Chef de Partie Pastry with Princess Cruises, you will be responsible for executing production in the Pastry area and stations according to company recipes and presentation, as directed by the Executive Pastry & Bakery Chef or Chef de Partie Pastry.

Responsibilities:

• Execute production in the Pastry area and stations according to company recipes and presentation, as directed by the Executive Pastry & Bakery Chef or Chef de Partie Pastry.
• Maintain and ensure that assigned section recipe files are available to assigned staff.
• Practice batch cooking and preparation for soufflés, puddings, crème brûlée, and other pastry items.
• Demonstrate an ongoing understanding of the ingredient consumption required for daily production in accordance with company recipes.
• Supervise and mentor Commis Pastry in an assigned service station during operational activities.
• Assist in on-the-job training for new hire Pastry staff as directed by the Executive Pastry & Bakery Chef or Chef De Partie Pastry.

Requirements:

• Formal qualification in Pastry Arts from a recognized culinary training institution.
• At least four years of pastry experience with at least one year experience as 1st Commis Pastry.
• Recent experience in high-volume Pastry production preferably from large hotels/resorts or cruise ships.
• Solid knowledge of international pastry recipes and preparation process.
• Solid knowledge of USPH Standards, Food Safety and Waste Management.
• Command of the English language, both verbal and written.
