Description
As a Sous Chef with Princess Cruises, you will play a key role in ensuring the consistent delivery of high-quality food products in the assigned Galley section. This involves supervising product delivery, controlling mise-en-place, and successful supervision of production schedules and Galley manning. You will also contribute to food and beverage improvement strategies as directed by the Executive Chef or Food and Beverage Director. In addition, you will supervise Galley staff during operational activities, monitor compliance with production and storage requirements, and conduct daily briefings with staff.
A formal qualification in Culinary Arts from a recognized culinary training institution is required, along with a minimum of six years' experience in a high-volume hotel or food service environment, including prior cruise ship experience. At least two years in a leadership role as Sous Chef or higher is also necessary. Proficient knowledge of international cuisine and recipes, with the ability to execute diverse culinary styles to a high standard, is essential. You should also be able to adapt production methods to optimize cost efficiency and demonstrate experience in training and supervising a multicultural team, with strong performance monitoring skills.
