HAL - Sous Chef TAM

We are seeking a highly skilled Sous Chef to join our team on board one of our luxury cruise ships. As a Sous Chef, you will be responsible for directing and overseeing team members and overall food preparation, production, and presentation in either the main galley, lido market, or crew mess room.

Key Responsibilities

• Ensure compliance with company policies on waste separation and environmental compliance, and conduct regular training sessions with departmental members.
• Assist the Executive Sous Chef in implementing and executing food handling and cleaning procedures that meet USPH standards.
• Oversee food preparation and service in assigned outlets, ensuring adherence to standard menus and recipes.
• Monitor Guest Satisfaction Scores related to food taste, variety, presentation, and overall experience.
• Collaborate with the Executive Sous Chef on menu planning and implementation.
• Manage food-related budgets and targets.
• Assist in directing, supervising, and training galley staff.
• Prepare work schedules and monitor hours worked, adhering to ILO regulations.
• Participate in performance evaluations and recommend advancements.
• Supervise inventory management, storage, and cleanliness.
• Identify and report equipment malfunctions.
• Maintain high standards of cleanliness and USPH compliance.

Skills, Knowledge & Expertise

• 5+ years of experience in a 5-star hotel, cruise ship, or high-profile restaurant in a similar role.
• 3+ years of supervisory experience in a multicultural setting.
• High-volume operation experience (at least 500 meals per service).
• Advanced food safety certification and VSP knowledge.
• Extensive kitchen machinery and knife safety knowledge.
• Experience in all major culinary brigade stations.
• Proficiency in computer software and English language.
